The Essential Tofu Scramble

Every Vegetarian or Vegan household needs a good tofu scramble recipe for brunch, tacos, dinner, you name it! Here’s one from my kitchen to yours with just enough spice to wake you up. I like to serve it next to fried potatoes or hash browns and even meat eaters will change their minds about tofu.

TIME: 25 minutes

INGREDIENTS:

1 onion, diced

2 garlic cloves, minced

1, 16 ounce pack of firm tofu, crumbled

1 tablespoon of coconut oil or other high heat oil

1 small red bell pepper, diced

1 cup of sliced cremini mushrooms

1 cup of chopped carrots

1/2 teaspoon black pepper

1 teaspoon turmeric

1/2 teaspoon dried oregano

1/2 teaspoon chili powder

1 teaspoon paprika

1 tablespoon nutritional yeast

1 tablespoon tamari

1 teaspoon salt

YIELDS: 4 cups

Heat oil in a pan over medium high heat and add onion and garlic. Saute for 5 minutes or until onions become translucent.

Add bell pepper, carrots and mushroom and saute for 5 more minutes or until the vegetables are cooked thoroughly. Add crumbled tofu and saute for 5 minutes. Add remaining ingredients and saute for 5 more minutes. Enjoy!
