Coconut Jasmine Rice

There is nothing more satisfying to me than a simple rice dish. I could live off of just rice, tofu and sauteed veggies. Here is a simple recipe that doesn’t take any more work than a regular pot of rice but adds so much more to the flavor. Try using this rice when having Indian or Thai curry, or a stir fry. You won’t be disappointed.

TIME: 25 minutes

Ingredients:

1 cup jasmine rice

1 can coconut milk, 14 ounces

1 tablespoon brown sugar

1/4 teaspoon salt

1 cup water

Yield: 3 cups

Place rice in a colander and run under cool water until it runs clear. Once the rice is rinsed, place it in a saucepan with the rest of the ingredients and bring to a boil. Once it is boiling, cover and reduce heat to low and let simmer for 15 minutes without lifting the lid. After 15 minutes is up, remove from heat, leaving the lid on and let sit for 10 more minutes.
